Protein Skimmers work through a physical phenomenon called Foam Fractionation. In a nutshell, air bubbles are generated in the water column. As these bubbles rise to the surface, they collect dissolved organics and are carried to the surface. At the surface, electrochemical reactions are taking place, encapsulating "proteins" on the surface, and physically removing them from the water column.
